Here is where the advice comes in. I'm very concerned about the VANOS technology and the associated problems with engine recalls etc. I'd just like to hear from experts who can tell me if there are any particular years to avoid or if this is something that can be picked up on a pre-buyers inspection.

The 2001-2002 iirc have a rod bearing recall on the engine. If you find one of those that you want then you want to make sure that the recall was performed.
I have an '04 M3 and the best maintenance I have done to date was to refurbish my VANOS (baseplate, O-rings and VANOS filter) and replacing my VANOS bolts.
The key is to find an M3 that has been well maintained and to keep up on all of the maintenance. I have sent you PM. If you have any question let me know...
