Tri-tip how to. So-Cal people get in here
 
So i just made friends with the butcher at Central Market and he said he can cut me a piece of tri-tip. texas is brisket capitol and I love it but damn those sandwiches I had in Cali were awesome. Anybody with knowledge care to chime in with a recipe?

Ask him to leave the fat cap on and slow roast it on the grill for 45 minutes to an hour to a nice medium rare. All it needs is salt an pepper with some nice olive oil.

I FREAKIN LOVE THESES THINGS! Sooooo underrated and most people don't know about them.

That cut of meat used to be discarded but South Californians made it popular there. It's not very popular elsewhere but also goes by the name picahna or something like that
