The rubber insulation is a bit annoying, I used some CA to attach it to the housing itself because the O-rings look flimsy. The cold climate one was certainly tougher to install.

As jfoj says, you've got a soft thermostat that's letting too much coolant through. You can use the easter egg menu to show you actual temps if you like, but it sounds like you need to replace it.
