You absolutely right. As the temperature rises, the sensor's resistance falls. Meaning an internal short or a short in the wiring would indicate a hot condition as oppose to cold.

That does not look like dried up coolant. It actually looks like your fan clutch is leaking, you'll need a new one. Depending on the age of the pump it might be wise to replace that as well.

It seems like it goes out exactly when the oil pressure builds up in the engine. It could be the bearings. I think having an experienced professional look at it is your best bet.
