Have you checked the fuel pressure? should be about 50 psi.
Have you replaced the fuel filter? It has the fuel pressure regulator integrated in it.

You should be fine, most 225/50 - 16 tires show a wheel width of 6-8", your speedometer and mileage will be a little more off as the 225/50 tires are a little shorter, about 1%.

How much gas do you have in the car? The fuel level sensors could be showing more than you actually have.

The universal O2 sensor could be an issue, maybe the connections for the O2 heaters are not connected...

From your description I would check the VANOS Exhaust sensor number 5 in this diagram. The oil could leak from the o-ring number 6.
It might also be the solenoid valve number 2 or it's o-ring, there...
