If your looking for track day fun, either car will do. If your building a car for competition, I would go with the E36 M3 just because of the all the aftermarket options.

Do you have a/c on the car? You can remove the condenser to get direct airflow to the radiator.

You can also at vents or hood risers to your hood to help dissipate heat.
