My Ride: Sequoia X5 MR2 G20
I made gazpacho yesterday:

1 cucumber - 1/4" dice, seeded
2 bell peppers - 1/4" dice, seeded
12 roma tomatoes - 1/4" dice, with juice and seeds (from our garden)
1/2 sweet onion - minced
2 cloves garlic - crushed
1/4 cup red wine vinegar
56 oz tomato juice - canned
salt and pepper to taste
8 ice cubes

mix it all up and let it sit for at least 4 hours for flavors to meld. Serve with a drizzle of olive oil. Soooo good.
