The Fuji Natura, Nikon 35ti, Ricoh GR1/GR21, Leica Minilux are all amazing cameras, albeit a little bit expensive. There are some cheaper alternatives though, like the Contax T2.

The only thing that bothers me about P&S is that I don't have control over the exposure and DOF.
Edit: It appears that some of these do have an aperture mode.
