For beef roasts: spread cracked black pepper liberally over the meat. Then mix equal parts dijon mustard and softened butter and slather it on. Let sit uncovered in a fridge for 1-2 days, so that the air can dry out the surface a bit. Once cooked, you don't taste any mustard, but it gives the meat good flavor and the salt and acid help tenderize the meat and let it soak up some salt for moisture retention.
