If you're not roasting your own bean the night before you grind it, you've got nothing on them.

That said, snobism just for the sake of snobism is ignorance.
If you don't have a high quality grinder and an espresso machine costing in the thousands of buckaroos, two or three week old bean is just fine.
You won't notice the difference. Trust me.
