no late night carbs / 6 meals a day / meal timing in general has been completely debunked by intermittent fasting
and the more active you are the more carbs you can/should eat. for most guys, focusing on eating around 100g of quality carbs a day is plenty to fuel your gym activities and avoid excess fat gain.
but if you are eating more calories than you burn just from fat and protein and cutting carbs completely, you will still gain fat. If you eat excess calories it will always trump any effort at fat loss, regardless of carb intake
