i do the same... i save almost every jar I buy. If i have very little oil(usually olive or grape-seed ) from frying chicken breasts or something i will wash it down the drain but never anything like the fish fry or bacon grease... its always jarred and thrown away.

i also started to use rice flower instead of the all purpose... i like the way it crisps up more and is lighter
