Yeah, agreed for the most part. I think the main thing they add is a very light flavor that is unique and a lot of very interesting texture.

The sea cucumber I wouldn't consider expensive though. I've had it in Oakland Chinatown and it was pretty cheap and pretty common. The shark fin soup is definitely much more expensive and much less common.
