-2lbs chicken breast (boneless, skinless)
-32 oz of salsa (your choice....we used 16oz of habenero lime and 16oz of chipotle salsa)
-1 packet of taco seasoning
-1 can organic black beans (don't drain)
-1-1/2 cups of corn (frozen is fine)
-1 chopped medium yellow onion

Combine all ingredients and cook on low for 6-8 hours. So, start it in the AM when you are on your way to work. When you come home, take the chicken out and shred it, then return to the pot for ~1hr. Serve with yellow corn tortillas. For salsa we took a red onion and cilantro and chopped it so that it was fine. It was fantastic.
Thank you for this Making it for a second time today.
