With such a stiff setup from the selector rod on the transmission to the shift lever, noise transmission from inside the gearbox to the knob is unavoidable. The connection is more direct than you think - the selector rod manipulates additional pieces inside the gearbox that move the gears around. The way you stop this noise is that you need acoustic dampening material in the lever or the rod, between the gearbox and the shift knob. Stock BMW levers have this - the lower and upper sections of the shift lever are connected with semi-stiff rubber. But the stiff nature of the UUC setup (esp with non-rubber bushings) causes this noise to be transmitted into the cabin. It shouldn't be much louder than a "normal" playing volume on your stereo though.
