The sauce might be a little runny during cooking but you can always thicken that up when it's done cooking.

Mix a tablespoon of corn starch in a little bit of warm water and stir it in. When I made that chicken recipe, though, I diet have an issue with excess liquid.

Sooo good.
Should have taken a pick before shredding though. There was a lot of liquid left in the pot before I shredded but after adding it back in the chicken just soaked it all up. Thanks for the recipe. I like to strain the cooking liquid and then just use it to make a sauce from that. I feel like that most things that have cooked for 6, 8, 10 hours, there really isn't that much flavor left in them.
99 cents a pound, I couldn't pass up chicken thighs again. All trimmed and soaking in their wet rub. I wanted to make a chili with brisket but at ~$4 a lb, I passed in favor of making a chicken chili. I have chicken stock, onion, garlic, dried guajillo peppers, dried chile costenos and dried habaneros in the bottom and the chicken on a rack a little off the bottom. I'm gonna do the same thing with the cooking liquid I would as with the pulled chicken but instead of making a BBQ sauce, I'll use it to make a chili base, then add the chicken towards the end of the cooking process. Just to increase volume I'll add beans to this one. Figure I should get 6-8 meals off of a ~$10 investment. |

made the chicken and salsa, beans, corn thing for me and the gf yesterday. came out great. put sour cream, cheese, and crushed up tortilla chips on it and wrapped in whole wheat tortilla.
kind of like chicken enchiladas. most importantly, she liked it and i got laid. i love the crock pot.

I let it cook for about 10hrs and the meat is just falling apart it's so tender! Omg I can't wait for lunch!

I made gazpacho yesterday:
1 cucumber - 1/4" dice, seeded 2 bell peppers - 1/4" dice, seeded 12 roma tomatoes - 1/4" dice, with juice and seeds (from our garden) 1/2 sweet onion - minced 2 cloves garlic - crushed 1/4 cup red wine vinegar 56 oz tomato juice - canned salt and pepper to taste 8 ice cubes mix it all up and let it sit for at least 4 hours for flavors to meld. Serve with a drizzle of olive oil. Soooo good. |

so i have a bunch of chicken breasts and tomatoes that i want to get rid of. what's something i can make out of this? i'd be willing to buy some more simple ingredients to add to the mix, obviously.
