egg muffins
I hate making breakfast and figured this would save me time in the mornings.
Hopefully you guys like this idea. Egg muffins I didn't really measure and you really dont have to. Here's how i did it Preheat oven at 350 8 eggs Half a pack of bacon chopped in food processor and cooked first Maybe a cup of Spinach chopped in food processor and cooked Handfull of Mexican shredded cheese. I just mixed it all up in a bowl then used a ladle to put it in the cup cake tray. Cook about 25 minutes and your set. My batch made 9. I just ate 3. To me this will be an awesome snack throughout the day or breakfast when you're in a rush. If they're already made of course. |

I'm eating them now again. Next time I'm going to avoid the cup cake trays and just pour them in a greased pan. They stick the the paper a lot

Now that I"m thinking about this, the wife and I made something similar a year, or so, ago.
Took a muffin pan like that and cut out a piece of wheat bread in a circular shape so that it would fit in the bottom of one of the cups. Then used the rest of that slice of bread to line the cup, crack an egg in there. Add cheese, S&P, hot sauce, veggies and pieces of turkey sausage. Pop them in the oven. I never thought to do just egg, though. It'll be great for the work week breakfasts.

prob best to use a non stick pan and then just a shot of pam in each hole
![]() but those look great. i have 20 chickens at my lab, so i get about 10 eggs a day, so have to come up with more ideas to use them. how do these keep? can you freeze them or refrigerate for later and heat up and still taste good? would be nice to make a whole batch to last the week. i've been making my own egg mcmuffins like from mcD's. soooooo good. english muffin, egg, bacon or sausage, and cheese mmmmmmmmm

I made egg muffin today but a little different. Came out awesome.
4 eggs, 8 egg whites. 8 slices of grilled turkey bacon, some low fat Swiss chess, and steamed bag of spinach. I used a 8"x14" glass tray. I did not even put any oil or grease on it. Nothing got stuck. Had to cook it on 350 for 30 min, then broiled it for 5 min. Top came out perfect. Healthy and yummy. Thanks for the inspiration. Last edited by z00; 03-14-2012 at 12:03 AM. |

Turkey sausage, though. Turkey bacon tastes like shoe leather.
