Pork Adobo Recipe

2.5 pounds pork boneless ribs (you can use loin, but its not as fatty so not as much flavor)
1 medium sized onion, chopped
1 head of garlic, smash and chopped
1 cup of vinegar
3/4 cup soy sauce
5 dried chilis
5 bay leaves
1 tsp paprika
2 cans pineapple with juice
2 cups of water
salt/pepper to taste
2 tsbp corn starch mixed with 3 tbsp water

2 cups jasmine rice
oil
and of course Guinness stout for me

bring oil in a pot to medium, add in chilis, onion and garlic and sautee until translucent

while onions, garlic and chilis are cooking, soak rice for a minimum of 10 minutes in room temperature water. after soaking, strain out and shake off excess water.

bring 2 cups of rice to boil with 3 cups of hot water, bring to simmer, cover, bring heat to low and cook for 20 minutes. after 20 minutes, take rice off stove and let sit for a minimum of 10 minutes before opening pot.

once onions, garlic and chilis are translucent add in pork, 2 cups of water, 1 cup of vinegar, 3/4 cup soy sauce, salt/pepper, paprika, bay leaves. mix in, cover, and simmer for 30 minutes.

once simmering is done, transfer pork to frying pan or wok and brown on all sides

after browning, transfer pork back to pot and add in the corn starch mixture and pineapples/juice. simmer uncovered for 10 minutes.
