Will these E39 ins fit my E46?
Seen other posts but I feel lie these would fit... I don't understand the term offset with rims etc.. I habe stock 16's.

Not without hub centric rings. E46 and E39 have different hub bores

Might I ask why? And what would happen if I didn't?

Correct, the center part of the wheel, the hole in the middle, is larger on the E39. So, without the hub centric rings, they will not fit snug. But this is typically not your biggest problem, the offset is way off, meaning...these wheels could stick out further on your car and you could run into rubbing issues on your fenders.
I made this mistake a couple years ago. My advice, keep looking, you'll find the setup that will work, both mechanically and aesthetically.

technically they will fit just fine, but you SHOULD have hubcentric rings, otherwise all the weight of the wheel is spinning on just the 5 lug bolts and not being supported by the hub and that puts alot of stress on the lugs, but on my Lexus GS i drove with Infiniti wheels for a year without any problems and the infiniti wheels had a bigger hub bore, but this was before i knew about that. ha just my 2cents

To be honest, I think it those wheels will make your E46 look dated.

And if I'm wrong, I believe my offset on my 16s are 40, so do they change whenever the size of the rim increases?

I would recommend running hubcentric rings if you plan on getting those.
The wheel width is also relevant to know how the wheels are going to fit. Diameter will not affect the outer position, just the width and the offset.

my winters are et20. Depending on your suspension and what size tires you will run it may run a little. I have sport suspension and 225's all around. I rub mildly.

No way of knowing unless you can find out the width and offset.
