I'd suspect a sensor that has direct control over fuel or ignition and has the ability to make a big change.

air flow mass sensor
cam position sensor
crank position sensor
throttle position sensor
manifold pressure sensor (doesn't apply to E46)

A temperature sensor that was fluctuating wildly enough to cause a problem like what you described would likely throw a code. A small possibility though.

An oxygen sensor on the E46 is only used for closed loop running and catalyst efficiency, and in closed loop mode, the adjustments are very gradual an unlikely to do anything sudden.

if I go with apex I will go with ARC 8s
if it worked with front fenders I would go 18"x9.5" +35mm square setup, if not then 18"x8.5" +38mm front and 18"x9.5" +35mm rear.

I am clearly missing something that everyone else seems to notice here, but I do not find the ARC 8s attractive. I see the appeal if you are getting it for utilitarian purposes, but, meh.
