the ribdoctor does dinner 56k beware...lots of pictures...

Welcome, I've given recipes and some pictures...but today was different...the wife comes home late with 3 chicken leg quarters, and a giant rack of baby back ribs(over 3 pounds). oh and she wanted some new potatoes as well.


ok, so step by step, this is how I do it.


I begin with removing the membrane from the back of the ribs.

I took no pictures...
but heres a youtube.



then I move on to brining the chicken and the ribs in a solution.


in this case I use 1 cup of kosher salt(1/2 cup regular salt), 1/2 cup of sugar, and 4 quarts of water, I then whisked or stirred the solution till the salt/sugar was dissolved. I then added the chicken and the ribs.

I leave the meat in the brine for 1 hour.








at the same time I soaked the hickory wood chunks...only 2 for this amount of food.



I then prepared the charcoal chimney starter...that is about 60-70 maybe more briquettes of charcoal.



you place newspaper underneath and light it and in about 20-30 minutes the charcoal is ready.



while preparing the charcoal, I dry rub the ribs/chicken...

I used pepper, garlic powder, mustard powder, and some cayenne.

i placed both the ribs/chicken in the fridge in a bag for 1/2 hour(same time as I lit the charcoal)





when everything is done you add the 2 wood chunks, and then add the meat to the grill.

in about 1/2 hour things should look like this.


I keep rotating the meat every 1/2 hour. for 2 hours...



after those 2 hours, the chicken is done, but the ribs are not. you need to add about 10 more unlit briquettes to the lit charcoal.


the finished chicken plate looks like this.


and the ribs get added back for another hour.


towards the end of the cook time I added sauce to the ribs...

I mix tabasco and a couple other sauces and zest an orange...and stir it up and brush it onto the ribs..



you know they are done when you see the bare bones..and the ribs bend easily.

I cut the ribs up, or you could just pull them apart.

thats basically it, oh yeah the tinfoil you see is 6 new potatoes I cooked for 2 hours.

uhh nope...I'm uglier.

just a guy that knows how to remove membranes from the back of ribs...

a necessary step as if this is cooked, the membrane shrinks and makes your ribs tough to eat.
