You must DIP!!!! Always!!!

Some asian you are! jk When i'm having cold soba at home I just pour the sauce in the bowl too since I don't want to deal with extra cleanup. But when it's served like in the picture I posted, your only option is to dip. Otherwise the sauce would go under that bamboo mat and you end up with no sauce on your noodles and a big sloshing mess when you are done with the plate.

OR, you can dump the tempura on the mat, put the noodle on the tempura plate, pour the sauce on the noodles and enjoy...
