Question Very Low Idle (Sometimes?)

I was driving my 2000 328Ci last night after a shower had just hit Connecticut, where I reside, it was very humid and my car did something that its never done before.

I was on the highway and having 3 other people in my car I dropped the car into 3rd which put the engine at about 4000rpm and then gunned it, obviously not red-lining the car, shifting appropriately; after hitting about 90mph I put the car in neutral and coasted the rest of the way down the highway. Then the rmps began rapidly shifting between 550ish rpm and the usual idle. However, the vehicle didn't feel like it was anywhere near stalling...

I brought it to the closest building, which was a McDonald's, and turned off the engine. Turned it back on less than 3 minutes later and the car acted completely fine... I proceeded to let it sit for about 15 minutes, and then it drove fine.

However, after dropping my friends off, on the way back to my house the car did it again, but only when I had the defroster on... Weird I know.

What I think possibly could have happened:

1) It was a very humid day, the car doesn't like humid days to begin with, possibly could have just been messing with the gauges.

2) I did turn the defroster mid quick burst on the highway, I honestly don't know why a defroster would cause that to happen, but the two seemed linked.

3) My car has had a problem for a while now, where when I start the car on cold or humid days the engine just kind of revs up and down for no decipherable reason until the engine is slightly warm. Could the two be linked?

I know this is a big wall of text, but I'd really appreciate if someone who knew a little bit more than me could give me their thoughts on this. Thank you!

Sounds like a vacuum leak or an O2 sensor going bad. I'm not very mechanical, so I can't tell you how to diagnose which it is, or how to fix. Hope this helps.
