You typically have to sign off on some waiver that, as far as I understand, releases them from any liability. In any event, if I were getting any kind of saying in a foreign tongue inked into my skin, I would be DAMN sure I knew what it was, lol.

Anybody can be sued for malpractice. Whether or not they'll find shelter in the contract is a different story.
Generally a tattoo artist will disclaim all damages and limit their liability to fees paid. Perhaps a court would throw out the contract if the client asked for a Greek phrase and was given a tattoo of a giant d!ck, for example. But, given that the client most likely signed a contract with the above terms and also signed off on the design, he's most likely S.O.L. No court is going to say the tattoo artist has an inherent obligation to make sure the client's Greek spelling is accurate.
