Croxleys Ale House, Lower East Side NYC ![]() Shredded pork and pork belly in coconut chipotle cream sauce (!!!!!!!!!!!).. Calexico food cart, Soho NYC ![]() Marinated shredded pork, grilled mexican style corn.. Cafe Habana, Soho NYC ![]() Ham, steak, eggs and french fries.. Enriquettas, downtown Miami.. Some of the best cuban food ive ever had. ![]() Picodillo, tostones and THE BEST soda you will ever have, Havana Cola.. Black Bean Deli, Orlando FL

We do that about every two months. Just salt, pepper and chilis, maybe some Ms Dash, on a 1/4 pork shoulder and one chopped medium onion. Once cooked, drain out most, but not all of the juice, shred it with forks and add salt, pepper, chilis and maybe a little BBQ sauce, but not too much. Serve with good white rolls or even cheap white hamburger buns and then make sandwiches with pork, bbq sauce and homemade coleselaw. The coleslaw is key. SOooooo good.

Butter poached shrimp on top of a spinach pasta tossed with a roasted red pepper mainara sauce served with a roasted garlic and italian cheese crostini.
![]() Last night, I guess the best way to describe it would be a blackened shrimp club. (Bottom up) Turkey bacon, blackened shrimp, tomoato, avocado, romaine lettuce and a sauce that was made from light mayo, light sour cream and a little sriacha. |

Sesame seared tuna with a string cucumber salad... julienne the eff out of the cucumber, added some rice vinegar, oil, soy sauce, salt, and pickled ginger juice, let sit for at least an hour in the fridge, shaking or stirring every once in a while
Dipping sauce was made with soy sauce, rice vinegar, honey, and pickled ginger |

Steamed mussels in a white wine broth with leeks, jalapeno, and garlic, served with some ciabatta crostini
oven at 400, cut and bake bread until somewhat crispy but chewy... once it cools off it will firm up and become crispy, shouldn't take more then 10 or so minutes... brushed with evoo and a little sprinkle of kosher salt and fresh ground black pepper PEI mussels... sautee the leeks and jalapeno... you can wait until caramelizing, however i only used one leek so i didn't want to cook it that much or else there would have been nothing in the pan lol... add garlic the last minute, some salt and pepper, then pour in a cup of white wine, add mussels, let steam/low boil for 8 minutes... next time i'll be adding a couple tsp of flour to the broth once i get the mussels in the bowl... broth was great, however it would have been nice a little thicker toss with fresh parsley right before plating |
