i occasionally grabbed a lil pinch of raw burger when mom was cooking burgers as a child and didnt die, rare/pink burgers are so damn tasty when done up right

Anytime I am at a place that I trust, I get beef cooked as rare as the place will cook it. Actually that isn't entirely true... it depends on the cut. A fattier cut I am going to get cooked rare/medium rare. That's why I am such a filet fan. Pan sear the outside of a nice dry aged steak, like its a piece of fish, and that's really all it needs.

I just found this, not sure if I posted it since it's old but if I did, oh well. This is the furthest thing from healthy but who cares.

It's pretty much 2 thin hash browns (grated potato/sauteed onion) that then had mushrooms, peppers, onions, bacon, sausage and cheese stuffed in between then topped with 2 sunny side up eggs, Cholula, New Mexico Chile Powder and bacon bits. The sauce around the side is a port wine and cheddar cheese sauce.

When making pizza's, it's important to have some ingredients, like meats, cheeses, freshly roasted red peppers, green peppers, onions, mushrooms etc...



Then you have to oblige your friends requests for ugly pizzas like a BBQ chicken pizza (BBQ sauce, chicken, cheese):



Less ugly buffalo chicken pizza (pizza sauce, buffalo chicken, red onion, cheese):



Then more basic pizzas like the Hawaiian style here (Italian seasoning, Canadian bacon, cheese, sauce, pineapple):



Don't forget the custom creations like this Canadian bacon, pepperoni, mushroom, jalapeno, green bell pepper, roasted red pepper, and onion:



Somebody always wants a meat lovers pizza of course (bacon, sausage, pepperoni, sauce with Italian seasoning):



Then finish off with a custom creation (thin sliced sirloin steak, jalapenos, roasted red peppers, red onions, green bell peppers and Italian seasoning):

Forum's been slow... Here are a few, I haven't been doing too much lately:

Teriyaki marinated grilled chicken:



Homemade roasted garlic and Parmesan croutons, homemade Italian seasoned breadcrumbs made from a stale loaf of italian bread:



Omelette with 2 whites, chopped mushroom, red onion and a slice of american on a whole wheat flatbread:



(Before cooking) Blackened grilled chicken pizza with sherry carmelized red onion, a spicy/sweet "BBQ marinara" topped with blue cheese and the crust is brushed with a roasted garlic olive oil:



My girlfriends pizza, sliced tomato, fresh mozzarella, dried basil (forgot to get fresh) and a sesame seed crust:



I wish this picture came out better, breaded baked chicken cutlet, topped with grilled ham, grilled red onion, a broiled Parmesan tomato, baby spinach, blue cheese and a balsamic reduction:

Raw food has its place, but I don't think anyone ever eats it because of taste.

My buddy cooks for parties on the weekends. For this one it was ribs and chicken.

His smoker. It is set up for wood and LP also has rotating racks.



The ribs were about half way done. They just needed some sauce, cyder, to be wrapped and set back in the smoker for another two hours.

Not too much action around here lately. I've only got a few things from the past few weeks, nothing too good.

Here I took a chicken cutlet, butterflied it, pounded it thin and then rolled it with Boar's Head low salt ham and a thin slice of parmigiano reggiano. I trussed it closed to keep everything nice and tight.

Then I took Vidalia and Spanish onions and sautéed them with a touch of olive oil then added sliced mushrooms. Let that cook down, deglaze with marsala wine. I cooked off the alcohol in the wine then added the chicken cutlets. They were covered with onions and mushrooms and continuously basted, flipped and basted more.



I removed just the chicken, placed it in a small serving dish. I thickened the sauce with a little corn starch instead of butter, topped the chicken with it and then topped that with more freshly grated parmigiano reggiano.



The final product actually came out very good.

Here are some stuff i made in the past nothing crazy and all photos taken with the iphone.

Tuna Burger, lettuce, onions, tomatoes, avocado, kolby jack cheese etc... With home made fries.


Some kinda shrimp tempura rolls, i think it was shrimp tempura, avocado, cucumber topped with spicy mayo and ell sauce.



Pizza, mushroom, peppers and parsley with the regular yeast, salt, olive oil, all-purpose flour dough.


Steak tacos, guacamole, sour cream, cilantro, corn tortilla.
