***JJR4884's Whipped Pecan Banana Sweet Potato DIY***

Sorry guys but no pics, don't kill me but I am working today and I will be making this tonight...

By the time I am able to get a thread going, Thanksgiving will be over

But, it is a VERY simple recipe


Here you are





Whipped Pecan Banana Sweet Potatoes





5 medium sweet potatoes, scrubbed
4 bananas, unpeeled
2 sticks unsalted butter, room temp
Kosher Salt to taste
1/4 cup honey
1/2 cup all purpose flour
3/4 cup dark brown sugar
1 1/2 cups pecans, chopped/crushed



Preheat oven to 375





Prick the sweet potatoes all over with a fork, put them in a roasting pan and roast for about 30 minutes. Toss the bananas (keep the skin on for now) into the pan and continues roasting for another 10-15 minutes, until both the potatoes and bananas are very soft. Remove from pan but keep the oven on



When potatoes are cool enough to handle, coop out the flesh into a large mixing bowl. Peel the bananas and add them to the bowl along with 1 stick of the butter, add the honey as well. Season with some salt to taste and beat well with a wooden spoon until mixture is fluffy. Spoon into an oven-proof serving bowl and smooth the top.



In a separate mixing bowl, add the remaining stick of butter, sugar, flour, and pecans. Mix well until the you have the consistency of coarse crumbs. Sprinkle this mixture evenly over the sweet potatoes and place back in the oven. Bake for 20 minutes or until the crumbs are golden



Serve and enjoy





***As for the bowl to use for the sweet potatoes.... I have a rectangular casserole bowl, maybe 5 inches deep and like 10in x 6in..... works perfect for me. Don't use something that is wide and shallow because you won't have enough pecan crumble to cover that big of surface area......

lol thanks bud

i'm sure a pic of mashed sweet potatoes and bananas doesn' look as appetizing as a med-rare steak, so this thread can go without

if i take pics when i do this, i'll update the thread
