My Ride: Excalibur
Arrow Stuffed Pork Loin Fillets

You will need:

1 Pork loin fillet for each person
Fresh Thyme
Fresh Sage
Stoned Dates
Pressed Apple Juice (the cloudy kind)
Soft Cheese / Goats Cheese
Courgettes (zucchini)

Slice the fillets open so it forms a "pocket":



Chop the dates and stuff the fillet:



Add the sage and thyme:



Heat some olive oil in an ovenproof frying pan, add the fillets (you can seal them with cocktail sticks if you like, or leave them as they are and be careful when you turn them). Fry on both sides until golden:



Pour in the apple juice:



Top with the cheese:



Then put in the oven, moderate heat, for around 10 minutes. While it's cooking, slice the courgettes (zucchini), then saute in a pan with olive oil, salt and pepper, and fresh thyme, until golden:




Serve:




Remember to be very careful when taking the pan out of the oven - I fold a tea towel, AND use an oven glove.

Hmm... I think mushrooms would work better if you left out the sage and used lots of black pepper instead. Give it a try, I'm all for experimentation

That's a French () soft cheese with cracked black pepper in it. Blue cheese would be too overpowering, you should use a creamy flavour, nothing too strong

Aah, I decided to go with roast chicken last night with garlic butter stuffing

Pork Loin chops will have to wait for the weekend
