OK! Progress (well sort of).
After an unattended break, I'm back to the project. I expanded the hole on the back of the wall and went to work w/ the snake light again. I found the stud!!!!! Now... I know exactly where the left side of the stud is. The only variable that remains: Is an older house w/ plaster walls still built using 2x4 studs?

Jackpot! I ratcheted the bolts in, they are on there GOOD! It feels like I could hang from it...although I probably shouldn't.

Update:
Finished my work, installed the mount, grabbed it and with my knees against the wall, lifted up my feet. I stayed like that 3-4 seconds before I put my feet down. I saw no signs of stress, bending or looseness. I have a pic to prove it. I'll see if I find time to put it up.

Congrats man! It's always good when the TV actually stays up. I've had my doubts doing some heavy flat panels on cantilevers bolted to some old brick... I too give it the hang test.
