Italian cooking at its best.... aka the "Sunday Gravy"

Before there are any disputes....... if you think the word "gravy" means brown, then clearly you live in a place other than Rhode Island or NY/NJ... and your family isn't Italian....

Yea yea yea I know this is "technically" a sauce, but being Italian and using Nana Russo's recipe, this is a GRAVY.... when she makes a gravy, the entire family knows... and now I bring you the recipe that NO ONE in my family besides me was able to perfect..

Definition........ if it doesn't have a sh*t load of meat it in, its not a gravy. If you don't spend at least 4 hours on it, its not a gravy. If you don't cook it on a Sunday......... you've guessed it



I cooked on Sunday for about 20 people.. so my ingredients list is pretty big (size wise, not individual ingredients).. however even if you aren't cooking for a ton of people, you can still cook this much and freeze some, or enjoy some nice pasta for the next couple... years lol

Gravy

3 sticks of pepperoni, cut 3/4 inch thick
3 packages of sweet italian sausage... 6 links per package, each link cut in fours
1 small onion, yellow, chopped
6 cloves, chopped a little finer than the onion
5 cans of Pastene kitchen read crushed tomatoes
1 8oz can Pastene tomato paste
S+P
1 tbsp olive oil

Meatballs

5lb ground beef 80/20
Bread crumbs (maybe 3/4 cup)
5 cloves of garlic chopped fine
1/2 yellow onion chopped fine
6 eggs
good amount of salt... idk a tbsp or two


Gravy DIY

In a big pan, put the pepperoni, sausage, and onions, cook on high heat until the sausage starts to brown, and the pepperoni softens... should take about 10 minutes or so... onions will brown just a tad.. add the chopped garlic for the last minute or two, you don't want that to burn





add the cans of tomato sauce... all 5.... after each one, fill the can up about half way with water, swish around all the remaining tomato and dump it all in... same goes for the tomato paste... you definitely want a lot of water in there

cover, cook on high and stir frequently









now do the meatballs

put all the ingredients together and mix well.... form the meat balls no larger than 3 inches in diameter... make sure they are nice and compact, firm

pan fry them first.... put about 1/2 cm of oil in a large frying pan.... oil on med-high... fry the meatballs on each side until you have a nice golden crust... flip them once and thats it... you do not have to cook the entire outside of the meat ball. i suggest using two tablespoons to flip them, using tongs requires you to lift the meatball up rather that a spoon that can slide under and roll it over... if the meatball sticks a little bit, you are going to tear it apart with tongs

since the meatballs won't cook perfectly on each side (some will tilt) you will have a few that have a rather large portion on the outside that isn't cooked after you flip it once... with these exceptions you can cook it on the raw side for a quick minute or two

take them off as soon as they have a good sear.. they will still be raw in the middle but they will finish cooking in the gravy



when i was done with the meatballs, the oil was a little burned, so i poured it all out, deglazed the pan with some red wine, added a touch of oil, mixed well, and poured it into the gravy mmmmmmmmmmmmmmmm

I drained my meatballs on paper towel first... then place them gently in the gravy

continue to stir the gravy for the next 30 min or so... gotta let those tomatoes cooooooooooook






after a total of about 1.5 hours.. the gravy is done cooking and you can let it simmer for the next 2-3 hours... stirring less frequently, but still on occasion

i added a little salt and pepper in the beginning, however i would highly suggest waiting until the end.... once that gravy cooks for a while, you are going to need a lot less salt than you think... so if you add what you think is a good amount of salt in the beginning, it might end up too much in the end

Not only does it make me even more starving, but it gets me pissed off i have to eat a shitty lunch when i want meatballs now!!

i'm in the mood for crab right now.... so i'm gonna say crab

not to mention... friday night dinner is fun/messy... proper dinners like sushi/steak (something that requires utensils) is more for a saturday night theme
