The Rolex looks really nice. The Panerai is way too big for your arm, in my opinion.

(The bezel is too wide to be a Day Date I.)

They definitely are. I have a DJII myself. Didn't mean to come across as a d!ck, was just pointing out despite the similar look, there's a vast price difference.

Question For the automatic watch I recently got, how many winds does it take before I over wind the watch? Looking to get a watch winder soon but till then I've noticed that if I leave it overnight it'll die and I'll need to wind it in the morning to get it going again.

you don;t wind an automatic. you just kinda move your wrist and you will hear it winding.
