roasted eggplant curry + cilantro raita
1 big eggplant
1 onion 4 medium sized tomatoes 5-6 cloves of garlic thumb sized piece of ginger 5-6 dried chilies 1 tsp salt 1 tsp cumin 1 tsp coriander 2 tsp garam masala 1 tsp cumin seeds 4 cups of yogurt bunch of cilantro 1/4 tsp black pepper 1/2 tsp salt 1 green chili

mix the yogurt, cilantro, pepper, salt and green chili together and blend until smooth, then put in fridge until ready to eat

cut slits into eggplant and roast in oven on 350-400 until skin turns black and eggplant caves in on itself. this takes a long ass time so do it first

once its roasted it should look something like this. mash it up, and i leave some skin thats burnt in there for the grilled flavor

fry cumin seeds until they splutter

stir in the onions, fry till translucent. then add garlic/ginger and fry for a few minutes until fragrant

Ugh ok so this failed miserably. Taste was right, but the texture of the soft onion + soft tomato was real off putting. Next time I'll purée those both first and use more eggplant :/
