extract of bhut jolokia

honestly dom i'm going to try a pretty intense chili soon... going to use ground beef, pork, and veal along with some black beans, garlic, leeks, fresh tomatoes, diced jalapenos/serranos, and i will definitely be using some ghost chili extract. i've only made chili a couple times, its not my typical dish to serve, but considering the great texture and flavor from using different meats (think awesome meatballs) i'm hoping it will do the same for chili

just off the top of my head, i think i'll drizzle some blended cilantro oil over the top to give it a little freshness along with some very thinly sliced green onion, this chili will DEFINITELY need to be cooled down a bit

ill pass on the pork as far as chili goes. let me know how it turns out.

Alright here goes nothing... It's a little unconventional but anyone that has had it says that it is spectacular.

Ingredients (left to right): kosher salt, cubed bottom round, cumin, new mexico chili powder, ground black pepper, apple cider vinegar, chipotle chili powder, unsweetened dark chocolate, large shallot, crushed red pepper, roasted ground corriander, cayenne pepper, yellow onion, fresh ground chilis (chili de arbol, dried habanero and chili costeno), ground ancho chili, garlic, green bell pepper, poblano pepper, tomoato paste, dark beer, black peppercorns.



The meat was pan seared and then once that was done I then sauteed together the onion, shallot, bell pepper, poblano, and all of ground spices.



Then I deglaze the pan with the beer, and add the unsweetened chocolate and once that is melted I add the tomatoe paste and cider vinegar. I know it looks sort of gross but the flavors in there are intense. I let this simmer for ~10-15 minutes.



Then once that is done, I combine it with the meat and I threw a few whole guajillo chilis in the pot.



I acutally slow cooked this for roughly 10 hours. Served over egg noodles, topped with shredded cheddar cheese, sour cream and diced tomato, yellow bell pepper and red onion.

No in it at all, chili is on top. Same as putting it on rice, hot dogs etc... Just what was on the menu.

The same could be said about using ground meat and putting beans in it.

sounds good as long as it's a no-bean chili.
I like chili with noodles. If I'm not using my typical white rice I'll throw it over some egg noodles no problem.
