My Ride: 2001 Corolla
dealer installed wrong size tires! questions.

I took my car in for new tires and they put on 185/65/14. I had on, and the OE size is: 175/65/14.

I called them and they said it really shouldn't be a problem. If it's truly not a problem, then I have no problem with it.

But will it mess with height clearance(bottoming out), or possibly steering clearance? Or will it affect my speedometer accuracy?

This is a BMW forum but I do happen to know that this size works on your 2001 Corolla with no problem.

Your speedo will say 60mph when you're actually traveling 58.7mph. It'll also lower your ride height by a quarter inch. More importantly it may affect your odometer. So for example if you drive 10,000 miles your odometer might say you went 10220. (someone correct me if I'm wrong) Personally I wouldn't want to go with a skinnier tire, ie- 185 to 175. If it's just a daily driver it probably won't make a lot of difference though.
