If we're going to go German, I'd pick the BMW motor.
I may be going out on a limb here, but BMW parts availability and pricing > MB parts availability and pricing for those V8s, which is important because racecar.
Either engine will have way moar power than the go-kart will need anyway, lol.

Of course, we could go with a big 'murrican V8 and have tons of cheap power.
