NY Strip au Poivre with a white truffle shittake creamed spinach...

Salted, wait 60 min



Chopped baby spinach with two shittake mushrooms, diced shallot and one garlic clove



Sautee half the shallot with the garlic with a little oil and butter (1/2 tbsp)... added 1 tbsp of flour at the end and whisked thoroughly



Duck liver mousse with stone ground mustard, snack



Pepper steak, liberally, then some



Seared, put in oven at 350 while making the sauce



Add spinach to pan, cook until its idk.. done, add some parmigiano cheese, a little lighty cream, and a drizze of (real) white truffle oil

Deglaze pan with half of this



1 tsp of butter with the remaining shallots



Careful not to burn/boil it or else the cream will separate... sauce done
