Talking New job, a smorgasboard of seafood to feast on - ideas required!

So I've recently started a job that sees me looking after a 100m seafood portfolio (c.1000 products). As a result, loads of choice for employee purchases and also via a constant programme of product sampling.

Looking for a few maybe unusual combinations/recipes to keep things interesting for me.

First up I have some basic HLSO white shrimp, 26/30 count. Any suggestions to make them different? Practically anything will be OK with me (except mushrooms, the little ****ers! ) Happy with strong flavours, too.

We have a George Forman, small deep fryer, and a small single propane burner for "Sampling" at work. When experimenting at work, lemon, garlic, chives, ect get used along with anything else that sounds good. (Granted, I work in a high-end grocer, so I have EVERYTHING at my disposal.) It's getting hot, but seafood stews are always good, soft-shell crab sandwiches are delicious, and tuna with a quick sear is nice. Just start throwing **** together, you'll figure out what you like.

Oh, my seafood managers star dish is crab stuffed flounder that is in a nice beer batter then deep fried. Amazing. MMMMMM..... Maybe this will be dinner tonight....

Shrimp kokonda: Shrimp, lime juice, garlic, chopped onion, cilantro and salt . . let sit overnight and then add coconut milk. Serve cold. The lime will "cook" the shrimp, but unlike fish ceviche it takes forever - so you have to keep it in the lime for quite a while before diluting it down with the coconut.
